Butterfly pea flowers have been careful stone ground to give a blue powder like matcha. Blue Matcha has a different mix of antioxidants to Matcha, as well as being naturally caffeine free. Makes a great latte and can be enjoyed hot or cold exactly the same way you would make regular matcha.
Ours is sourced from a small garden in Thailand.
The addition of a little acid will change the colour from blue to purple to pink.
It can be used to colour and enhance food. Cocktails, smoothies, rice, desserts, pancakes and more. The culinary possibilities are endless. (keep an eye on the blog for recipe ideas).
Hot the blue matcha is smooth, a little creamy with none of the umami notes of regular matcha, no bitterness.
Cold brewed (1.5g of water to about 450ml of water in a bottle, then shake well). I think this is better way to consume it. Tastes clean and has a lightly earthy taste with a nice tang at the end.
